Using the pestle, crush the lime and sugar.
Add the mint leaves.
Fill the glass 2/3 full with crushed ice.
Add the Zone d'Ambre and sparkling water. Mix well with a cocktail spoon.
Add more crushed ice.
Garnish with a mint sprig.
